Smörgåstårta

The wonderful Swedish sandwich cake was revealed to me last week. I had heard about it from my husband but he hadn’t actually described how tasty and special it could be. He is the king of understatement. The Smörgåstårta is a special occasion cake made for birthday’s and anniversary’s in Sweden. It seems bizarre to my British sensibilities to think of a cake made of cheese sandwiches to be considered a delicacy but it truly is sumptuous. The savoury cake is time consuming to make but the ingredients are very easy to find. The art is in the layering and visual presentation, decorating the cake is a fine art. This is my Mother in Law’s beautiful creation using a recipe passed down from her Father.

One day I will make it for my Mum on a special occasion, for now savour the pictures of this fantastic celebratory lunch treat, perfect with a glass of Cava or Elderflower Fizz.
