Chocolate fudge

Another one for the chocoholics. I haven’t made fudge since childhood but my hand was forced due to a can of evaporated milk reaching its best before date this month!! Honest!! This is a tried and tested easy fudge recipe used for decades according to numerous websites and oh boy, it was damn good. Lovely silky texture, surprisingly not sickly sweet and incredibly moreish…this isn’t in any way healthy food but it did bring us pleasure during a worrying week.

Ingredients

Can of evaporated milk (400g)
200g sugar
30g butter
1/2 tsp salt
150g good quality dark chocolate

handful of chopped walnuts

Line a square brownie pan with greaseproof paper. Boil the milk, sugar, butter and salt together for 5 minutes stirring continuously. Take off the heat and add the chopped chocolate and stir until melted and then stir in the nuts. Using a spatula scape every last scrap of mixture into the brownie pan and level. Cool in the fridge for 3 hours before cutting into small squares. (approx 36 pieces) Store in the fridge in an airtight container, unlikely to last for long due to its extreme deliciousness.
